Pescado Splash
Here is a dish for salmon that is simple, yet healthy and full of flavor. Its ingredients are comparable to The Mediterranean Diet. The dish is rich in monounsaturated fat and omega-3 fatty acids. Adding in wild rice, brown rice or other whole grains will provide an excellent source of dietary fiber.
Ingredients
- (2) Tablespoons walnuts
- (3) Tablespoons chopped parsley
- (4) Teaspoons capers
- (1) Tablespoon minced scallions
- (½) Cup extra virgin olive oil
- (1) Tablespoon fresh lemon juice
- (2) lbs salmon fillet cut in 6 portions
- Salt and freshly ground pepper
Instructions
- Combine parsley, walnuts, scallions and garlic in a bowl.
- Roast walnuts in the oven at 350° F for 30 minutes. Remove walnuts from the oven and add them to the bowl. Stir in half the olive oil. Set aside.
- Preheat broiler or grill.
- Brush salmon with the remaining olive oil and broil or grill close to the source of heat for 2 minutes on each side or to desired degree of doneness.
- Remove from heat and allow to rest for 2 minutes
- Season salmon to taste with salt and pepper.
- Stir in lemon juice to the bowl
- Drizzle or brush mixture over salmon and serve.
